Spaghetti squash is a winter vegetable rich in vitamins, minerals, and antioxidants. Due to its low calorie and high fibre content, it is a very popular choice as part of a healthy diet and isa low-carb alternative to pasta, combined with veggies, protein, whole grains, andhealthy fats.
Best cooked simply... Spaghetti Squash is very easy to prepare. Cut in half - scoop out the seeds, and roast with a drizzle of olive oil or butter, herbs and salt & pepper. You can then scrape out the 'spaghetti-like' flesh! Here are some links to our favourite Spaghetti Squash recipes...
